Nilgai Meat Loaf: “Ante-loaf”

Nilgai Meat Loaf:  “Ante-loaf”

Prep Time: 15 minutes

Cook Time: 50 minutes

Total Time: 1 hour, 5 minutes

Yield: 8-10 servings


  • 3 lbs ground nilgai, venison, or other lean meat
  • 4 eggs
  • 1 envelope Lipton dry onion soup mix
  • 1 cup bread crumbs
  • 2 cups shredded Pepper Jack cheese
  • 3 green onions, thinly sliced
  • 1 cup barbecue sauce


  1. Preheat oven to 400 degrees.
  2. Combine ground meat, eggs, soup mix, bread crumbs, cheese, onions, and 1/2 cup barbecue sauce in large mixing bowl. Using hands, mix together thoroughly. Divide in half and press into two regular loaf pans.
  3. Bake uncovered in oven for 35 minutes.
  4. Remove pans from oven, top with remaining barbecue sauce, and bake for 10 more minutes.
  5. Let rest for 5 minutes before serving.


Makes two meatloaves.
