Nilgai Meat Loaf: “Ante-loaf”

Total Time: 1 hour, 5 minutes
Yield: 8-10 servings
Ingredients
- 3 lbs ground nilgai, venison, or other lean meat
- 4 eggs
- 1 envelope Lipton dry onion soup mix
- 1 cup bread crumbs
- 2 cups shredded Pepper Jack cheese
- 3 green onions, thinly sliced
- 1 cup barbecue sauce
Instructions
- Preheat oven to 400 degrees.
- Combine ground meat, eggs, soup mix, bread crumbs, cheese, onions, and 1/2 cup barbecue sauce in large mixing bowl. Using hands, mix together thoroughly. Divide in half and press into two regular loaf pans.
- Bake uncovered in oven for 35 minutes.
- Remove pans from oven, top with remaining barbecue sauce, and bake for 10 more minutes.
- Let rest for 5 minutes before serving.

Makes two meatloaves.
