Oryx Green Chile Stew
3 lbs. Oryx Roast 1 lb. Fresh Green Chile 3 Ears of fresh corn 3 Zuchinni 3 Yellow Squash 6 Roma tomatoes 6 tbs. fresh garlic Salt to taste Garlic salt to taste Cut your Oryx roast into half inch cubes and fry till slightly crispy. (I added Manteca to meat cause its lean), when meat is slightly crispy add chopped green chile with 3 tbs. of fresh garlic and fry for about 5 minutes. Put meat and chile in a crock pot and put on low to cook overnight. Take your ears of corn and shave off your kernels place in a pan with about 3 tbs. of Manteca and cook it till it has a fried look. Take your zucchini and yellow squash and cut up into half in cubes and add it to your corn with 3 tbs. of fresh garlic. Fry till vegetables are somewhat softened and then add your cut up roma tomatoes and cook for about 5 minutes then add to your green chile stew in crock pot. Season with salt to taste.
